When you buy beets and greens, make sure, as soon as you get home, that you cut them off. Ensure the leaves remain intact. Because there is a lot of dirt trapped in the leaves, wash them thoroughly.
Now cut the stems off because these cook a little bit longer than the leaves.
Cut them into slightly smaller pieces.
Now cut the garlic thinly.
If you like spicy food, then add some cayenne pepper or pepperoncino. These will add a nice kick to the dish.
Then, add the beet green stems. Stir them around to coat with oil and garlic, and then transfer the pan to the oven. Roast the stems until they begin to soften and take on a bit of color, which should take about 10 minutes.
Now grab a large ovenproof pan. Heat a generous drizzle of olive oil over medium heat.
Add the sliced garlic and cayenne pepper. Now stir until the garlic is fragrant.
Add stems to the pan.
Add a pinch of salt for a refreshing flavor.
Mix everything to ensure that the vegetables are coated with oil and garlic.
Sprinkle some salt on it.
Cover the dish, and return it to the oven to wilt the vegetables. This process should require an additional 5 to 10 minutes.
